Spicy Seafood Jambalaya

Prep time: 25 minutes – Cook time: 35 minutes – Total: 60 minutes

 Ingredients:

  •  200 g Kiełbasa śląska sausage
  • 150 g seafood mix-  mussels/calamari/clams/shrimp
  • 200 g rice
  • .4 liter chicken broth
  • 1 whole onion, chopped
  • 2 cloves garlic, diced
  • 1 fresh chile pepper, diced
  • 100 g fresh cauliflower, chopped
  • handful of frozen vegetables
  • 1 tbs tomato concentrate
  • 2 tbs olive oil
  • 1/2 lemon

Seasonings: 

  • 1/2 tsp crushed coriander
  • 1 tsp paprika
  • 1 tsp basil
  • 1/4 tsp chiltepin pepper
  • salt & pepper to taste
  • dash of Tabasco (or your favorite hot sauce)

Instructions: 

  1. Add oil to pan over medium heat, cook sausage until browned
  2. Remove sausage, set aside (leave oil in the pan)
  3. Add onions & garlic, sauté 5 mins
  4. Add peppers, cauliflower, frozen veg to pan, cook aprox. 5 mins
  5. Add (uncooked) rice, sausage, chicken broth & seasonings to pan, simmer & cover for 15 mins
  6. Add seafood mix

Let it simmer until it’s hot, serve with lemon & enjoy !
